Ganache (guh-NOSH) is a lovely, luscious chocolate sauce made from nothing more than a cup of whipping cream (heavy cream) and a 12 oz bag of dark chocolate chips. It's easy to make, and it can easily be used as a frosting substitute or an ice cream topping or anything else you'd want a chocolate sauce for.
Ingredients:
- 8 oz whipping cream or heavy cream
- 12 oz semi-sweet chocolate chips
In a small pan, heat the cream, stirring frequently, until it just begins to steam. Remove the cream from the heat and pour in the chocolate chips. Let stand for 5 minutes, and then stir the mixture until it is all a lovely, smooth, chocolaty brown (takes about a minute, usually). Let stand for 15 minutes to cool and then use as desired. Refrigerate any leftovers. Refrigerated leftovers will be solid to semi-solid, and can be warmed to become pourable again.
Quality & Substitution Notes:
Be sure to use a good brand of chocolate chips. This usually rules out store brand chips and definitely rules out sub store brand chips. Cheap chips don't work as well, since they include a sort of waxy filler that messes with the desired texture. Also, this recipe does not work well if done with only milk chocolate chips, again because they contain too much non-chocolate material. (These failure notes are from personal experience!) However, it should work with a mixture of half semi-sweet and half milk chocolate chips, if milk chocolate is desired.
